Most mushroom varieties are keto-friendly, with under 10 g of total carbs per 100 g. Some varieties such as the common white mushroom have only 2.3 g of net carbs. Shiitake and maitake mushrooms contain just slightly more than 4.3 g of net carbs.

Mushrooms contain 281% of the recommended daily value of Vitamin D, as well as good amounts of water-soluble B vitamins – thiamin, riboflavin, and niacin. Stir-frying is a great way to prepare mushrooms and retain most of their vitamin content.
