Ingredients (3 servings)
Caramel
- 3 oz butter
- 3 oz double cream
- 1 tsp erythritol
- 1 pinch salt
Flan butter
- 3 eggs
- 1/2 cup double cream
- 1/2 cup fat organic milk
- 3 oz erythritol

Prepare the ingredients.

Make the caramel. Take a saucepan and add in the butter. Heat the butter until it turns light brown.

Pour in 3 oz of double cream. Stir gently for about 2-3 minutes.

Add 1 tsp erythritol and a pinch of salt. Quickly mix and set aside. The caramel is ready.

Pour in the milk and rest of the cream into the separate pan. Heat until 100F.

Beat eggs in a large bowl. Pour in the warm milk and cream. Mix.

Add the 3 oz erythritol and mix the Flan butter.

Gather two medium ramekins or another small dish, not a large baking dish. Pour in the caramel.

Pour the Flan butter after. Bake in the oven at 300F for about 1 hour.

Chill in the fridge for at least 4 hours. Done!
