Sweetener converter

Work out an estimated sweetness match, with separate choices for pure sweeteners and a specific monkfruit blend.

About 142.86 g of Pure allulose

To match the estimated sweetness of 100 g of Table sugar.

Table sugar: Sweetness reference. Source

Pure allulose: Approximately 70% of sugar sweetness by weight. Browns differently from sugar. Source

This matches estimated sweetness, not recipe structure or nutrition. Pure sweetener volume estimates assume similar bulk density; weigh ingredients for greater accuracy. Concentrated monkfruit/stevia extracts and other branded blends need their own package ratio. A sweetness match cannot guarantee a successful bake.

Choose the product, not just the sweetener name

Pure monkfruit extract is different from a bulk monkfruit and erythritol blend. This tool includes Lakanto Classic specifically, whose manufacturer gives a cup-for-cup sugar replacement. For other blends, use your package conversion.

Sweetness is only one part of baking

Changing sweeteners can affect moisture, browning, crystallization and volume. Use a recipe written for your chosen sweetener when those properties matter. Read allulose versus erythritol and our keto sweetener guide.

Does this calculate net carbs?

No. Use the quantities from your actual product label in the net-carb calculator. Allulose is a sugar, not a sugar alcohol. US labels include it in total carbohydrate even when it is excluded from total sugars.
